Nutrition Education OverviewThree years ago, the Sacramento Hunger Commission set out to create a nutrition manual and curriculum. Americorps*VISTAs working for the Hunger Commission developed the manual and curriculum by teaching numerous nutrition and cooking classes to low-income residents of Sacramento. Nutrition classes have been presented to a wide range individuals, including transitional housing residents, children, ESL students, youth involved in a garden project and SRO (Single Room Occupancy hotel) residents. In 2003, we began to make the curriculum available to other agencies, in the hopes that the material could reach more low-income residents of Sacramento. Two "train the trainer" type workshops were presented, and the manual and curriculum in their entirety are available below. The manual contains the Food Guide Pyramid based curriculum the Sacramento Hunger Commission developed, as well as many helpful handouts on topics such as, serving size, microwave cooking, and food safety tips. The manual also contains recipes and information on a variety of food related health concerns, such as heart disease, diabetes, and mental health and nutrition.
